This version owes its delicate flavour and golden hue to saffron.<\/p>\n\n\n\n<p>Active Time: 30 mins | Total Time: 30 mins<\/p>\n\n\n\n<p>Yield: 6 Servings<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<p>5 1\/2 cups chicken stock, preferably homemade<\/p>\n\n\n\n<p>2 tablespoons chopped flat-leaf parsley<\/p>\n\n\n\n<p>2 tablespoons extra-virgin olive oil<\/p>\n\n\n\n<p>1 small onion, finely chopped<\/p>\n\n\n\n<p>Kosher salt<\/p>\n\n\n\n<p>Freshly ground black pepper<\/p>\n\n\n\n<p>1 1\/2 cups arborio rice (10 ounces)<\/p>\n\n\n\n<p>Pinch of saffron threads<\/p>\n\n\n\n<p>1\/2 cup dry white wine<\/p>\n\n\n\n<p>1\/2 cup freshly grated Parmigiano-Reggiano cheese<\/p>\n\n\n\n<p>1 tablespoon unsalted butter<\/p>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a medium saucepan, bring the chicken stock to a simmer; keep warm.<\/li>\n\n\n\n<li>In a large saucepan, heat the olive oil. Add the onion, season with salt and pepper, and cook over moderate heat, stirring, until softened, about 5 minutes.<\/li>\n\n\n\n<li>Add the rice and cook for 1 minute, stirring to coat thoroughly.<\/li>\n\n\n\n<li>Crumble the saffron into the wine.<\/li>\n\n\n\n<li>Add the saffron and wine mixture to the rice.<\/li>\n\n\n\n<li>Cook, stirring, until the wine is absorbed.<\/li>\n\n\n\n<li>Add 1 cup of the warm stock and cook over moderate heat, stirring constantly, until nearly absorbed.<\/li>\n\n\n\n<li>Continue adding the stock 1\/2 cup at a time, stirring constantly, until it is nearly absorbed between additions.<\/li>\n\n\n\n<li>The risotto is done when the rice is al dente and suspended in a thick, creamy sauce, about 20 minutes total. Season the risotto with salt and pepper. Stir in the cheese, butter, and parsley and serve immediately.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\"
