Energy Balls

A quick, easy, and nutritious snack that keeps you fueled on the go. You can store these energy balls in the fridge for up to seven days or freeze them for up to six months.
Ingredients
1/2 cup flax seeds
1/2 cup pecan pieces
1/2 cup plain almonds
1/2 cup uncooked oatmeal
1 cup unsweetened coconut
2 tablespoons of coconut oil
(peanut butter or almond butter can also be used)
2 cups of pitted dates
1/4 teaspoon salt
Method
- 1. In a food processor, pulse flax, pecans, almonds, and oatmeal until a crumbly paste forms.
- Add coconut, dates, oil/butter, and salt.
- Pulse until a sticky batter forms (you may need to add a tablespoon of water depending on the moisture level of the dates).
- Roll into 24 balls of 1.5 ounces each.
