Creamy Asparagus Soup

Ingredients
- 1 lb fresh asparagus, trimmed and cut into pieces
- 1 tbsp olive oil or butter
- 1 small onion, diced
- 2 cups chicken broth or vegetable broth
- 1 cup milk or light cream
- Salt and pepper
- Chopped asparagus and croutons for garnish (optional)
Method
- Heat olive oil in a pot over medium heat.
- Add diced onion and cook until soft and fragrant.
- Add asparagus pieces and sauté for 3-4 minutes.
- Pour in broth and simmer for about 10 minutes until asparagus is tender. Blend the soup until smooth.
- Return to the pot, stir in milk or light cream, and season with salt and pepper.
